Our restaurant, led by Resident Executive Chef Bautista, celebrates the essence of Palawan through a refined yet approachable menu inspired by local produce, seasonal ingredients, and modern Filipino flavors. Many of our ingredients come directly from Atalaya’s own farm, where we grow fresh herbs, vegetables, and tropical fruits used daily in our kitchen. This is part of our evolving farm-to-table philosophy, aimed at creating a sustainable, authentic dining experience that connects guests to the land and its bounty.
